We don’t see many single varietal Cabernet Sauvignons produced in New Zealand, so it is great to see one that is as good as this. A wine that wowed us all.
Dark and densely coloured, this has a fullness and richness of flavour that marks this as a ‘great wine’. Pristinely ripe fruit gives flavours of blackcurrant, blackberry, with graphite/pencil shaving notes and a dried herb/saltbush touch. There’s a youthful energy on the concentrated palate.
From part of the vineyard that is dry farmed and cropped at a mere one bunch per cane. The grapes were hand picked then passed through Paritua’s state of the art optical sorter before fermentation and aging.
Located in the Bridge Pa Triangle region of Hawkes Bay, Paritua is a 53ha organically farmed vineyard and winery producing some of Hawkes Bay’s best classically styled wines. Hawkes Bay born and bred, winemaker Jason Stent discovered the great wines of France when he was in a racing cycle team based in Bordeaux. After a number of years as assistant winemaker at Sacred Hill, working alongside Tony Bish, he joined Paritua as their winemaker in 2008.
Paritua’s focus is on premium wine. Wine bearing the Paritua's label are only produced in outstanding vintages, while the Stone Paddock label is produced every year. The winery also sells excess fruit to maintain the high quality of their own wines. There is no doubting that Paritua produce some of Hawkes Bay's top wines.

"A rich and vibrant aroma of dark cherry, plum and mocha with a touch of wet stone, graphite with hints of all spice, leather notes, underlining the complex bouquet. A silky textured seamless concentrated palate with fine grained tannins, and cedar, with a hint of vanilla.
Our Cabernet Sauvignon vines are grown at our Paritua Vineyard on Maraekakaho Road. This part of the vineyard is dry farmed and has not been irrigated for 14 years. The vines are managed to crop light and have good fruit exposure. Fruit thinning takes place to one bunch per cane to maximize ripening potential. Harvest is all by hand once the grapes have achieved physiological ripeness."

"Opaque and concentrated hues of dark purple with a ruby and bright purple rim. Aromas of ripeness and concentration, dark berries and barrel smoke, lots of earth and stone then violets and sweet tobacco. Dry, full-bodied power and youthful tension as the wine touches the palate. Flavours of vanilla and clove then blackberry and dark plum, some savoury spice highlights, violets and plum paste. Tannins have firmness as well as polish, acidity has power offering contrast to the fruit concentration. Well made, dry and lengthy. Delicious with best drinking from 2027 through 2034+."

"A really “dark bloody burgundy” colour. A powerful bouquet – “smells like Old Holborn tobacco” underneath black, spicy fruit. Peppercorn, hay, dried herbs and smoked olive. A good palate weight – smooth but intense. Toasty oak adds an old-school european edge to these New World flavours. Dry and long at the finish."
