Cava is a Spanish sparkling wine, produced exactly like Champagne and with a similar taste, but with a different variety of grapes (primarily Macabeo). Macabeu isn’t overly-sweet and has subtle floral aromatics with a hint of lemon. The Xarel-lo grape component is more overtly aromatic with notes of melon/pear, and the Paralleda grape is blended in for it’s powerful acidity and citrus flavours.
