"Nose – Lime. HoneySuckle. Beeswax.
Palate – Broad. Textural. Driven.
Inspired by dry Rieslings of Austria and Germany, this wine balances acidity with texture. Fruit from our Black Rabbit vineyard was foot stomped, left overnight, then whole-bunch pressed to tank for wild fermentation and lees maturation. It spent three years on gross lees, undergoing a natural malolactic one summer, before being bottled by hand in October 2024, unfined and unfiltered."

"Complex, textured, dry and precise with a focus on flavours of grapefruit and green pear, apple and lemonade lemons. There’s a definitive texture and tension from a salty acid line and lees then citrus pith and peel. Well made, youthful and raw. A delicious wine that needs development time still with best drinking from 2028 through 2034+."
