"Huia Blanc de Blancs is 100% Chardonnay and estate grown. The nose shows fresh citrus and lovely fresh baked bread characters. Light citrus flavours retain freshness on the palate. This hand-crafted sparkling wine is delicious with canapés, freshly shucked oysters, sushi and seafood but really any time is a good time for a glass of bubbles!
A sparkling wine made in the traditional method. The grapes were hand-picked and whole bunch pressed. Then the juice was racked off to barrels for fermentation. A warm, fast ferment was encouraged. Base wines underwent full malolactic fermentation and were aged on gross lees in old French oak. Secondary yeast fermentation was conducted in the bottle and was aged on the yeast lees for 32 months."

"Seductively complex with aromas of honeysuckle and developed autolysis, white strawberry and apple, some stone fruit moments and mild toasty core. Delicious on the palate with flavours that reflect the nose plus peach and sweet grapefruit, lemon pith and mineral. An elegant mousse, sweet acidity and long finish. Delicious!"
