"Grapes for this Chardonnay were grown adjacent to our winery. The “hen and chicken” berries of the Mendoza clone of Chardonnay used in this blend give full tropical flavours. The fruit was harvested and brought to the winery where it was immediately pressed and cooled for a 24 hour settling period. Following this, the juice was racked and warmed before inoculation. Once the ferment was active it was gravity fed into one year old French barriques. The wine completed primary fermentation in oak before then undergoing malolactic fermentation. During fermentation, the barrels were hand stirred regularly to build palate weight and structure. Following this, the wine was left sitting on lees for a further 12 months before being racked from barrique, blended and prepared for bottling.

The 2015 Seifried Chardonnay is elegant with layers of fruit and oak beautifully balanced. The nose has ripe summer peach notes alongside warm buttered toast characters. Palate is full flavoursome and lingering with warm spicy characters on the finish.​"

"Bright, light golden-hued yellow colour, lighter on the edge. The nose is gently full and evenly presented with accessible aromas of yellow stonefruits melded with lemon-curd MLF, unfolding creamy barrel-ferment and nutty oak elements, building to form an elegant core. Medium-full bodied, the palate has a softly rounded heart of yellow stonefruit flavours integrated with layers of lemon-curd MLF and hints of butterscotch along with sweet, nutty oak elements. The palate shows a rounded and accessible body with light textures and integrated acidity, lending freshness and energy. The wine flows positively to a dry, lingering finish of stonefruits and MLF. This is an accessible Chardonnay with a soft core of stonefruits, lemon-curd and nutty oak. Match with poultry and pork over the next3-4 years. Mendoza clone fruit from the ‘Rabbit Island’ vineyard barrel-fermented to 14.0% alc., the wine aged 12 months in 1 y.o. French oak barriques undergoing batonnage and MLF."
