Winery notes (NV)
"The fruit for this wine is sourced from a few small Waipara Valley vineyards. The fruit is picked early in order to retain the lower sugar and high acid levels to produce a quality Methode Traditionelle. 70% Pinot Noir, 30% Chardonnay. Each batch was gently pressed over 6 hours and fermented dry in small tanks. After tirage the wine was left on lees for 20 months before disgorging. Final residual sugar is 6g/L.

Aromas and flavours of green apple and lemon peel, honey suckle and butterscotch. The palate is rich yet refreshing and the mouthfeel is delicate yet persistent."

"A delightful bouquet of a developing sparkling wine with an immediately complex autolysis scent of brioche and baked bread then fruit aromas of apple and peach. Vibrant and enticing. Equally delightful on the palate with an explosive mousse filled with flavours of apple and stone fruits then the same seam of autolysis takes over with flavours of baked goods. Delicious, fresh, fruity, dry and ready. Best drinking from day of purchase and through 2026."

The Crater Rim takes its name from the twin craters of the ancient Akaroa and Lyttelton volcanos. Eruptions from these majestic landforms in ages past gifted the surrounding land with an enduring fertility.

The Crater Rim's first yineyard was planted above Akaroa township and the significance of this location in terms of its climatic effect on the whole region of Canterbury meant this brand would extend to include plantings in additional sub-regionsof Waipara, Omihi and Banks Peninsula and Central Otago.

Waipara, in North Canterbury's hills, is now the home base for The Crater Rim where specific sub-regional terriors contribute to the wines produced on their vineyards. Exceptional Pinot Noir is produced at The Crater Rim's winery site, Omihi Rise, also in North Canterbury. The Frahar Vineyard in Waipara also supplies Pinot Noir and Sauvignon Blanc grapes.

The Crater Rim is a frequent recipient of awards, including multiple medals in the New World Wine Awards and regular reviews by Sam Kim of Wine Orbit.
