Pegasus Bay wines are made to age, and their wines tend to be released later than most wineries, holding them back until they feel they are beginning to be ready to drink. However, these are wines that will improve further with cellaring and so each year a small, limited cellar release is made of wines that are 10 years old – ready to enjoy and savour.

"It has a deep ruby hue. The aromas and flavours evoke impressions of black cherries, purple plums, wild blackberries and mulberries. These are underpinned with a savoury dimension suggestive of roast game, grilled mushrooms and black olive tapenade. There is a layer of velvety tannins that coat and refine its big body and taut muscular structure, helping to draw out its lingering aftertaste of chocolate mocha and spice. While ready to drink on release it can be expected to cellar well and evolve gracefully for many years."

"Fantastic wine. From the complexity within the bouquet to the textures from fine tannins to acidity and barrel selection, this wine is delicious. There’s still some youthful qualities within from the primary fruits of cherry and plum to boysenberry and barrel spices, savoury dried herbs and earthy tones, this wine charms with every nose. Dry, textured and lengthy on the palate with a synergy of complexity that can only come from bottle age. Some reductive moments add to this. An abundance of fine polished tannins and plenty of acid line for length and freshness this wine will continue to age. Best from day of purchase through 2038."

"Deep ruby-red with a slight garnet hue, lighter on the rim. The nose is voluminous, with concentrated aromas of black cherry, blackberry, olive, black tea, herbs, sweet spice, dried shiitake and dried floral. Medium-full bodied, aromas of black cherry, dried blackberry and tapenade intertwined with black tea, nutmeg, cinnamon, liquorice, dried hibiscus and dried shiitake. The wine is detailed in layers; the fruit possesses vitality and concentration, accompanied by spice with sharpness and edge. Silky tannins carry floral and black tea fragrances throughout and provide a fine, enduring structure. Impressive, refined and persistent. Match with beef wellington and herb-crusted lamb over the next 5+ years. Only produced in exceptional vintages, best barrels selection. Fruit from mainly ungrafted vines over 30 y.o., indigenous yeast fermented with approx. one-third whole clusters and as many whole berries as possible to 13.5% alc., the wine aged 18 months in 30% new French oak barriques."
