Established in 1983 by Neil and Alison Paullet, in the beautiful Clare Valley sub-region of Polish Hill, Paullets remains a family run winery. Early on they established a vineyard restaurant as they always believed that their wines should match food and the wines always have a sense of drinkability about them.. makes sense.
Winery notes (2020 Vintage)
"Vibrant blue and red fruits aromas, with hints of bay leaf, cocoa powder and mint. Full bodied shiraz richness. Fresh red and blue fruits carry over from the nose along with some black olive, choc berry and sweet spice. Fine firm tannins give texture and length."

96/100 Winestate Magazine – World's Greatest Shiraz Challenge (2019 Vintage)
"Deep red wine with loads of plum and cherry-like fruit characters nicely supported by the spicy oak and an earth/chocolatey suggestion and nice slippery tannins."
Rated Excellent & 93/100 Cameron Douglas MS, April 2024 (2019 Vintage)
"Fragrant and fruity, varietal and enticing, natural spice qualities and core fruit aromas of dark cherries and plums, black currant and compote. Dry with core fruit flavours that reflect the bouquet, licorice spice and bramble, a lovely fine tannins texture and acid line for contrast and tautness. Youthful and firm, there’s complexity within the textures and mouthfeel across the palate. A lovely example with dryness and concentration, fruit, and varietal impressions. Best drinking from day of purchase through 2030."
