Produced from organically grown fruit off the Terrace Edge vineyard and made by two North Canterbury winemakers who are making a real name for themselves as Pet Nat specialists. We love it.

"It was only a Matter of Time until David Collins (15 Minute Bottles) and James Opie (Bryterlater) collaborated on a collective vision. A confluence of characters. Inspired by the old world, and grounded in the nouveau, we capture a snapshot of the site and season in the glass. Crafted from selected organic sites in and around North Canterbury and beyond.

Gently direct pressed. Wild ferment in large format oak. Settled and stabilized over the winter. Bottled in the spring with the addition of frozen juice before bottle fermentation. Lime cordial, pear and lychee, bitter tonic finish."
