"A creamy and textural Chenin Blanc expressing deftly-integrated oak, from the higher slopes of the Aude. A range of wines from cooler terroirs, handcrafted by our winemaker, Guillaume Létang. “Les Volets” translates to “shutters”. The kind of window shutter you find on almost every house in the south of France. As the shutters are absolutely typical of the villages of the Haute Vallée de l’Aude, so too are these wines completely expressive of the region.
The Haute Vallée de L’Aude benefits from a warm climate combined with high altitude, which results in wines with both concentrated fruit and refreshing acidity. These vineyards are located on the cooler slopes of the Pyrenees foothills on beds of limestone and clay. The Chenin Blanc is one of the last varieties to be picked, giving plenty of time for full, elegant ripeness to be achieved, while maintaining a refreshing crispness and crunch. After being hand-picked, the grapes are fermented in stainless steel with a substantial French oak touch at the end, to add a toasty, suave finish to complement the vigorous fruit.
Lovely aromas of peach, citrus, brioche, hazelnut and a luscious finish."
