Winery notes (2019 Vintage)
"40% Grenache Blanc, 40% Roussanne, 20% Clairette. A slow pneumatic press for gentle juice extraction. Juice settled over 1 week for natural clarification. Roussanne is racked into 2 or 3 season old French barrels for fermentation on total lees for 11 months. Grenache blanc and Clairette aged for 11 months in stainless steel tank. After a light filtration the wine is bottled to the cycles of the moon for stability with minimal added sulphur to protect the wine. A wine to enjoy with chicken, fish and spicy Asian or curried dishes. Pairs well with vegetarian stir fry, risottos, root vegetable and creamy pastas."

"The tension in this spicy wine is palpable and yet cannot contain the luminous richness. Grilled pineapple and quinine, nutmeg and salt, quince and lemon marmalade and the spicy herb note of helichrysum. It changes, from moment to moment. It seems to fling wide …and pulls back in, tight and textured and even spicier on the finish, filling the throat with gingery warmth. This wine seems to become more and more magnificent with each year of age."

"Subtle hazelnut and peach aromas. Rich, ripe banana and vanilla oak. Slight oxidative notes with an enjoyable texture. Long and fresh, with good minerality on the finish."
