This delicious staff favourite is what Vouvray is all about. A wine of contradictions, it is richly textured but also fresh, dry and steely-mineral. From 100% Chenin Blanc; 50-60 year-old vines on flinty (silex) soils, it is a classic European match with fish, white meat and pork belly.

Fouquet has now retired and Charles Lesaffre has taken over. He used to be commercial director of Vignobles Feray, which includes Château Moncountour in Vouvray. Drink 2022 – 2032."
