"As a small, single-site, small-batch project, The Katalyst is focused on showcasing a more serious and sophisticated side of Marlborough Sauvignon Blanc. While honoring the region's hallmark bold aromatics, our wine ventures beyond the expected, demonstrating the multifaceted potential of this variety. It’s a wine of layers and depth, offering a grown-up perspective on what New Zealand Sauvignon Blanc can achieve.
The Sauvignon Blanc is handpicked and whole-bunch pressed, then fermented in barrel with a subtle touch of oak. Some indigenous yeast was used during fermentation, and the wine was aged on lees, resulting in a full-bodied, riper expression. Sourced from the renowned Auntsfield Vineyard, it showcases the textural side of Sauvignon Blanc, typical of the Southern Valleys region. It is of very small scale, only 450 bottles produced."

"Great colour and brightness with shades of pale straw and youthful green. An excellent bouquet showcasing variety and style with aromas of cape gooseberry and passionfruit, then grapefruit, angelica and sage. Youthful, bright and fragrant. Dry, taut and youthful with the grab of acidity loading onto the palate first, then flavours of citrus and sage, tropical fruit and a cold river stone minerality. Lengthy finish, new and delicious with best drinking from mid to late 2025 through 2029+."
