A predominately Sauvignon Blanc blend fermented in a variety of vessels including Amphora
“Salty White is my ode to the New Zealand coastline, an attempt to marry both the saline and floral elements of our land.” – Theo Coles
Winemaker Theo Cole's label The Hermit Ram is gaining such a large following all around the world that is often hard to find his wines in our shop as they are quickly snapped up. In general, the fruit comes from tiny vineyards throughout the Canterbury region. Every wine has its own story to tell. The vines are naturally farmed, and the wines made with the minimal number of additions. Old techniques are employed. They are wines of depth, complexity, individuality and most importantly drinkability.
Winery notes (2022 Vintage)
"This salty Canterbury blend of Sauvignon Blanc, Pinot Blanc, and Chardonnay is the vinous equivalent of the colour of the sash it wears on the label. It's packed full with vivid orange fruit and spice – like a carrot, ginger, turmeric health elixir that you actually want to drink. In spite a mere 11.5% abv, the mid palate feels saturated and voluminous, all contained within fairly taut phenolic scaffolding. It's a lot of fun without the frivolity, playing between generosity and poise. Fun, yes. Thoughtful, yes. Embarrassingly drinkable? YES."
