In a small niche of the Davey Estate Vineyard the soil, climate & Shiraz combine to create something special – the fruit that is ultimately hand crafted to become D Block Reserve Shiraz. A true reserve wine, the D Block is only made in exceptional vintages.
Winery notes (2021 Vintage)
"Dark cherry to vermillion with a dense core. The nose is strong blackberry fruit with cocoa powder and a hint of bay leaf. The palate entry is substantial. This is a full bodied wine showing blackberry and dark cherries. The tannin structure, similar to that of dark chocolate, holds the tension on the palate, whilst the acidity elicits length of flavour without any harsh edges. This wine has great balance and should develop well over the coming years. The wine will best be enjoyed after decanting a few hours prior to drinking.
Gentle hand working of the skins in small 5 tonne open fermenters and traditional winemaking practices protect & nurture the unique qualities of the terroir. Very fine grained French (80%) & American (20%) oak hogsheads are used to allow a long, slow maturation of the wine & subtle oak integration. A combination of 1 – 6 year old barrels, crafted by select coopers to our requirements, are used to create nuances & diversity of flavour. When maturation & oak integration are perfect, individual barrels are selected & blended to create the fruit power, complexity & harmonious balance that is Shingleback D Block Reserve Shiraz."
