"Strong red fruit aromas backed by spicy notes. Rich and focused palate framing the red fruit. Tannins are constant from the beginning to end, finishing with a pleasant grip that suggests ageability.
Hand-picked and stored overnight to reduce the fruit temperature prior to hand sorting the following morning. 70% was destemmed and 30% whole bunches were included. This wine had an ambient soak before undergoing wild fermentation. Both free run and pressing were combined to barrel where it finished off fermentation and was aged for a period of 18 months in French oak barrels. 30% new oak was included. This wine was unfined."

"A youthful, vibrant and varietal bouquet filled with scents of savoury plum and dark cherry, some violet and dried herb then baked red apple skin, red fruit tea and smoky wood spices from barrel ageing. A youthful wine touches the palate with a distinctive earthy, dried herb and red fruits profile. The tannins add a lot of texture and accentuate the savoury tones in the wine, acidity is fresh and youthful and carries the fruit flavours smoothly throughout the palate. A young wine that needs more development and settling time to fuse together all the bolder, louder attributes. Best drinking from 2026 through 2034+."

"The 2021 Settlement Vineyard Pinot Noir is concentrated and spicy, with goji berry and kirsch, black pepper, dark chocolate and roasted game. The wine is far darker, deeper and more brooding than I expected from this vineyard; although the Southern Valleys region often does deliver the power and density in spades, so it works so well within the confines of the wine. It's from a single vineyard that was planted in 2009, on loessial topsoil over clay loam. A composition of seven different Pinot Noir clones, the grapes were handpicked and hand sorted; it was made with 30% whole bunches, had a wild fermentation, matured for 18 months in barrel and was bottled unfined."
