Serafino (Steve) Maglieri arrived in McLaren Vale in 1968 determined to enter the wine industry. From picking, pruning and cellar hand work to planting his own vineyards and building his first winery, Steve has enjoyed great success. Today the Serafino vineyards have expanded to 300 acres of prime McLaren Vale land and a new state of the art winery, purpose built for small batch production.

"Distinct aromas of delightful mocha and mulberry complemented with vanilla and cedar oak. A generous display of bright red fruits on the palate; including blackberry, blueberry, mint, Swiss dark chocolate and violets intertwined with spicy fine grained tannins. The French and American oaks integrate harmoniously with dark berry fruits, providing full flavoured wine with layers of texture.
The Shiraz grapes were picked and delivered at optimum flavour and intensity to Serafino winery for the fruit to be crushed and destemmed. Fermentation was completed in our four tonne open fermenters. The fermentation process of converting sugars to alcohol takes eight days. During this period each fermenter is carefully pumped over twice daily. In the early stages we use a technique called delestage, where the juice is racked of the skins and then returned again to help with colour extraction, tannin enhancement and build the depth of flavour. At the end of primary fermentation, the wine was pressed off skins and allowed to complete malolactic fermentation. The wine is then racked to a combination of 25% new and older French and American oak hogsheads (300L), for a further 12 months."

"Captures so much of what McLaren vale is all about. Lifted notes of florals and dark chocolate with a subtle spicy licorice infusion. There are some decent deep black fruit characters in here merged well with the fine grained oak. A slightly powdery tannin contribution adds to its structure and poise. That oak has a subtle addition of American to the French component and it brings another sweet fruit dimension."
