La Ferme de Sato ("Sato Farm") are the range of wines from Yoshiaki and Kyoko Sato's very own vineyard. Here these vines have been tended to all year by Yoshiaki and Kyoko and made on-site too in their winery which is located at the top of their hillside vineyard.
Winery notes (2023 Vintage)
"Sato Pisa Vineyard. Soil: Alluvial, sandy or silt loam with schist & quartz gravel. Viticulture: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used. Harvest: Hand picked, 16 & 17 April 2023. 47 hl/ha. Vinification: Natural yeast fermentation. All destemmed. 28 days on skins. No additives except for 15 mg/l sulphites before bottling. Maturation: 19 months in old French oak barrels. Bottled: January 2025 without fining or filtration. Approx 1800 bottles produced."

"Subtle and focused with precise blackberry, walnut, bark and mushroom character on the nose and palate. Medium-bodied, it’s linear and lightly chewy, giving this length and tension. So fascinating to taste and think about. Drink or hold."
