Pinot Bianco is a white wine grape and a genetic mutation of Pinot Noir. The eponymous Dogheria vineyard occupies an ideal position for cultivating Pinot Bianco, benefiting from intense ventilation that fosters significant day-to-night temperature variations crucial for the development of its distinctive sensory profile and retaining freshness. Hand harvested and fermented in stainless steel to retain varietal and terroir typicity it has an aroma of jasmine, peach and citrus with mineral notes from the soil leading to a rich, ripe, dry palate structure with salivating acidity perfect to match with raw seafood, sashimi, wok-cooked vegetables and white meats.
