Pegasus Bay wines are made to age, and their wines tend to be released later than most wineries, holding them back until they feel they are beginning to be ready to drink. However, these are wines that will improve further with cellaring and so each year a small, limited cellar release is made of wines that are 10 years old – ready to enjoy and savour.

"Extended bottle aging has given this wine a rich golden tint. The abundant aromas and flavours suggest white fleshed peach, nectarine, citrus blossom, mandarin, and lime. These are supporting by hints of jasmine, lychee, honeycomb, and some distinct flinty, mineral notes, showcasing the wine’s maturity. It is concentrated and mouth filling, yet elegant and poised, with a core of tangy minerality and acidity that balance its off-dry finish and help draw out the lingering aftertaste."

"Fantastic bouquet, the Pegasus Bay signature of complexity, style and a moment botrytis, classic. I do notice a lick of ‘kero’ in the bouquet, it adds breadth, depth and a certain Germanic quality. The bouquet also has equal intensity of lemon and peach with a distinctive minerality and unmistakable layer of intrigue. Outstanding on the palate, off-dry and tense with acidity. Flavours of citrus and apricot then apple and honeysuckle follow. Lengthy and delicious with a lick of orange peel and pith. Best drinking from day of purchase through 2030+."

"Bright, even, straw yellow with a green hue and depth. The nose is lifted, with aromas of green apple, dried apple slice, lime, petrol, crushed rocks and zest. Medium-full bodied, off-dry to taste, aromas of lime, lime peels entwined with baked apple, kumquat, honey, ginger, crushed rocks and a touch of petroleum. The wine is well-integrated and harmonious, with complex aromas developed, accompanied by soft yet enticing acidity, carrying long length and a moreish closing. A juicy Riesling with well-balanced strength and complex development. Match with chorizo pasta and chicken liver & white wine over the next 3-5 years. The fruit was harvested late in the season with a portion of botrytis, free run juice was cool fermented to 12.5% alc, 25 g/l RS."
