We first came across this wine a few of years ago, and since then it has gathered quite a following. Supply has sometimes been an issue, but happily we have it back in stock again.
Pavo Nero is a 50/50 blend of Primitivo and Negroamaro from Puglia (The heel of Italy). Made using the appassimento method allowing the grapes to naturally dry on the vine and concentrate their flavours. This drying process yields less juice but enhances its richness and aromatic depth.
Coming in at a solid 15% alc, this is definitely in the big red category, but it is by no means a heavy or over the top. In the glass, it shows a deep red hue with alluring aromas of dark berries, cherry, a hint of strawberry, and subtle notes of spice, raisin, and vanilla. The palate is intense, brimming with lush fruit, yet balanced and smooth. Full-bodied with ripe tannins, it offers a lingering finish filled with intriguing nuances – an elegantly crafted Appassimento.
