"A delicate blush hue with a glistening clarity that instantly signals elegance. Lifted aromas of wildflower, redcurrant, and exotic stone fruit, layered with subtle spice and a hint of floral perfume. Textured and richly expressive. A spice-layered mid-palate provides depth, while vibrant acidity and a fine mineral thread deliver freshness and drive. The fruit profile leans towards red berries and tropical notes, creating intrigue and balance. Fresh, persistent, and poised – the kind of finish that makes you instantly want another sip.
100% Pinot Noir, carefully selected and hand-picked bunches were lightly pressed using a gently methode champenois press style. Free run of this press cycle is used so as to avoid colour pick up and heighten aromatics. Indigenous yeast fermentation ran for 3 months in stainless steel sitting between 13 and 20 degrees celsius. The fermentation was stopped with 2.5g/L of residual sugar for lovely balance. No fining and vegan friendly. A versatile wine that shines on its own but pairs beautifully with seafood, charcuterie, or long lunches in the sunshine with friends."
