Winery notes (2022 Vintage)
"92% Sauvignon Blanc, 8% Viognier. On skins for 155 days. 16 months élevage. BioGro Certified organic fruit.
Hand harvested. 100% destemmed into open top fermenter where the fruit underwent wild fermentation. Viognier component was handpicked from separate vineyard site & added into ferment approximately 5 days after the Sauvignon. Gently hand plunged once a day during primary. Vessel was then sealed after fermentation had finished & was not opened until being basket pressed after 155 days on skins into a seasoned French oak demi-muid. Approx 95% of the resulting wine was free run, the remaining 5% being pressings. The barrel was never lees stirred, only topped every once & a while to encourage more oxidative characters. The wine had 16 months élevage, during which time a small S02 addition was made before being racked to VC to settle. Bottled unfined & unfiltered."

You may also choose to 'pick up' your order from our wine shop at 188 Durham Street South, Christchurch.

Note, for orders of 1 - 2 bottles we charge an additional $6 for packaging. To ensure the safety of the bottles we use specially designed posting boxes.
