"It was only a Matter of Time until David Collins (15 Minute Bottles) and James Opie (Bryterlater) collaborated on a collective vision. A confluence of characters. Inspired by the old world, and grounded in the nouveau, we capture a snapshot of the site and season in the glass. Crafted from selected organic sites in and around North Canterbury and beyond.
Gently direct pressed. Wild ferment in large format oak. Settled and stabilized over the winter. Bottled in the spring with the addition of frozen juice before bottle fermentation. Lime cordial, pear and lychee, bitter tonic finish."

"A sparkling wine from the Waipara region in North Canterbury. Using Albariño grapes in an undisgorged Pet Nat (Col Fundo) style. A pale silvery green colour in the glass. The perfume is delicate and has a distinctly ‘grape’ like opening. Lemon, pear, lime zest, white peach and fresh herbs. The bubbles are quite soft and mousse-like. A mixture of clean juiciness and a funky, salty drive makes for plenty of personality into the palate. Fresh and brimming with energy, it is a dry, refreshing and tightly coiled expression."
