Buy OnlineLa Ferme de Sato ("Sato Farm") are the range of wines from Yoshiaki and Kyoko Sato's very own vineyard. Here these vines have been tended to all year by Yoshiaki and Kyoko and made on-site too in their winery which is located at the top of their hillside vineyard.
Winery notes (2023 Vintage)
"Sato Pisa Vineyard. Soil: Alluvial, sandy or silt loam with schist & quartz gravel. Viticulture: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used. Harvest: Hand picked, 29 March – 17 April 2023. 44 hl/ha. Vinification: Natural yeast fermentation. No whole bunch, 26 – 35 days on skins. No additives except for 15 mg/l sulfites before bottling. Maturation: 20 months in French oak barrels. 22% new oak. Bottled: 14 January 2025 without fining or filtration."

"A pinot noir with clarity and purity, showing fresh and dried strawberries, burnt oranges and layers of cherries and cranberries. A touch of orange peel. Medium-bodied with a solid core of fruit, fine tannins and a juicy undertone. Crunchy, with hints of smoke and flint at the end."

"Pale garnet. Really appetising, subtle nose. Richer than many a burgundy but just as rich as some grands crus! This is really delicious! There's a hint of orange peel as well as some floral notes with an undertow of savour. There's good structure but no obvious tannin. Sore-throat remedy? Very long."

"The 2022 Sur Les Nuages is the voice of the vineyard, taking Pinot Noir fruit from all blocks at the estate, just as the Le Chant du Vent does with the Chardonnay. Aromatically, the wine leads with red fruits and woodsy spice, the palate revealing the same characteristic mineral flow of tannin and texture as all of the wines—red and white—show. The structure is the attribute of these wines; they feel mineral and fresh but also fine and ductile. The fruit is predominantly destemmed, only a small whole bunch, and the tannins feel very much derived from the skin of the grape, from the place. While the Les Violettes is undoubtedly a purist's wine of shape and kaleidoscopic complexity, this is an undeniably beautiful expression of place, hand and variety. I love them both for different reasons."
