La Ferme de Sato ("Sato Farm") are the range of wines from Yoshiaki and Kyoko Sato's very own vineyard. Here these vines have been tended to all year by Yoshiaki and Kyoko and made on-site too in their winery which is located at the top of their hillside vineyard.
Winery notes (2022 Vintage)
"Sato Pisa Vineyard. Soil: Alluvial, sandy or silt loam with schist & quartz gravel. Viticulture: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used. Harvest: Hand picked, 22 March – 9 April 2022. 47 hl/ha. Vinification: Natural yeast fermentation. 14% whole bunch, 26 – 29 days on skins. No additives except for 15 mg/l sulfites before bottling. Maturation: 19 months in French oak barrels. 10% new oak. Bottled: 15 December 2023 without fining or filtration. 6842 bottles produced."

"The aromas and flavours are marked with dried-strawberry, nutmeg, bark and mushroom character. Tar too. This is structured, showing fine tannins that give a beautiful mouthfeel and tension. Medium-bodied with a dusty texture in the finish and a long and thoughtful ending. Rather ethereal and energetic. Drink now or hold."
