Winery notes (2022 Vintage)
"This is a wine that will appeal to all those who love something sparkling. It has fresh and lively aromatics of pineapple, lemon balm and citrus fruits with a long and lingering palate that will gain in both layers and richness with ageing. We choose not to disgorge our Pétillant Naturel allowing the light natural sediment to stay in the bottle, adding flavour and textural elements with the wine retaining its natural effervescence.

Uniquely made from Riesling and Pinot Noir grapes. The fruit for our 2022 Petillant Naturel was handpicked off selected hillside blocks at Greystone. We gently whole bunch pressed, with only the purest, free run juice being run to tank for the first stage of fermentation.

4 weeks into fermentation, the young wine was chilled to allow a brief settling period before being estate bottled without fining, filtration, or sulphur. The wine then completed the second stage of fermentation in the bottle, capturing the delicate subtle mousse and reaching full dryness over the following six weeks."

"Fantastic bouquet of fresh baked goods and ripe pears, there’s a delicious spice and apple fragrance, quince and a touch of fresh grapefruit marmalade and ginger. On the palate – crisp, crunchy, fresh, fruity salivating and dry. Textures from the lees and unfined technique layer in mouthfeel and character. Balanced, well made and delicious. Best drinking from day of purchase and through 2024+."

"Closed with a crown seal, the 2021 vintage from this Waipara, North Canterbury producer was made from hand-harvested Riesling and 'bottled prior to fully completing its first fermentation, allowing carbon dioxide to be produced by the natural sugars found in the grapes'. Certified organic, it was made with 'no added sulphur', and bottled unfined and unfiltered. Light lemon/green, it's a characterful, slightly austere wine, with strong, vigorous, lemony, appley flavours, firm acid spine and an unusually dry (3.4 grams/litre of residual sugar) finish."

Greystone Wines is a family-owned vineyard located in the Waipara wine region in Canterbury, New Zealand. Since its establishment, the vineyard has quickly gained a reputation for producing some of the finest wines in the region, particularly their award-winning Pinot Noir and Chardonnay.

The vineyard is situated on the slopes of the Teviotdale Hills, which provide an ideal microclimate for growing grapes. The soils are rich in limestone, which gives the wines a unique mineral character. Greystone Wines is committed to sustainable viticulture practices, and they use a range of organic and biodynamic methods to manage their vineyards. They also have a strong focus on low-intervention winemaking, which allows the grapes to express their natural terroir.
