Winery notes (2021 Vintage)
"Dry, complex, and delicious on the palate with texture framing flavours that reflect the bouquet, a naturally higher acid line expands the citrus and zest-like qualities.
Erin's Chardonnay grows on our steepest and highest slopes, in limestone soils which impart a beautiful minerality and tension to the wine. The block is 100% Mendoza clone, which responds well to this terroir. 2021 started with a harsh frost before a long dry summer settled in which meant clean fruit and beautiful acidity. However, we were left with a nearly 70% reduction in yield. The dry autumn meant fruit ripened evenly and the concentration of flavour was very noticeable. Fruit was harvested in the cool of the early morning to retain freshness and acidity.
We handpicked our steepest block of Mendoza Chardonnay before a gentle whole-bunch pressing to tank without additions. We allowed the juice to settle overnight before we racked to French oak barrels for wild fermentation and full malolactic fermentation. The extended nature of fermentation brings not only richness to the wine but also layers and subtle complexity. Barrel ageing lasted 16 months before the wine was estate bottled without fining."

"Immensely complex and engaging, the bouquet shows ripe stone fruit, lemon peel, savoury pastry, cedar and oatmeal characters. The powerfully concentrated palate displays outstanding weight and depth, wonderfully complemented by plush texture and beautifully pitched acidity. It's sumptuous and opulent, yet with grace and structure, finishing impressively long and gratifying. Certified organic. At its best: now to 2033."

"Greystone views Chardonnay as 'the finest white wine variety'. Grown on steep, north-facing limestone slopes, this wine is hand-harvested, fermented with indigenous yeasts, given a full, softening malolactic fermentation, and matured in French oak casks (14 per cent new in 2021). The pale gold 2021 vintage is a powerful, sturdy wine. Notably concentrated, it is very rich and complex, with deep, ripe stonefruit flavours, fresh acidity, and a tightly structured finish. A wine with a strong presence, it should be at its best 2025+. Certified organic."

"A complex and textured bouquet with scents of grapefruit and limestone chalky mineral suggestions, baked yellow apple, lees and wild flowers. The oak scents layer in structure and spice and the lees add finesse and breadth. Dry, complex and delicious on the palate with texture framing flavours that reflect the bouquet, a naturally higher acid line expands the citrus and zest-like qualities, oak is present yet layers in quietly and adds in a mix of fine tannins, spice and flavours. Lengthy and delicious with best drinking from 2024 through 2030."
