"Whole bunch pressed straight to barrel – No added enzymes, SO2 or yeasts. Wild natural fermentation, followed by 100% Malolactic fermentation. SO2 added post Malo. Lees stirred at the on-set of malolactic fermentation and left to settle for 9 months in 265L Cigars and some 600 Demi Muid. Assembled and racked to two 5yr+ 600L Demi Muid for a further 9 months. It was then racked to tank where it naturally settled for 2 months to allow bottling unfiltered."

"Complex and detailed bouquet with layers of citrus peel and white spice then lemon and cape gooseberry, wild flowers and a sandy mineral suggestion. A dry wine on the palate with perhaps a delicate spritz to the acid line line. Flavours of citrus and peach then wild flowers and orchard fruits follow. Complex, well made, natural and refreshing style. Best drinking from day of purchase through 2030."
