This is a lively 100% Chardonnay packed with white flowers and impressive minerality backed by bracing acidity and beautiful, rounded flavour. The grapes are hand-picked and then pressed very gently. It was fermented in stainless steel using wild yeasts to provide added complexity.
Since planting their first vineyards in 1987, Jean and Catherine Montanet have been one of the main forces behind the revitalization of Vézelay as a wine region. Domaine Montanet-Thoden started as a “cave cooperative”, but in 1999 Jean broke out of the cooperative and formed Domaine de la Cadette to create the best possible basis for making unvarnished wines that best reflect the terroir of Vézelay.
Domaine Montanet-Thoden is owned by Catherine Montanet and Tom Thoden, but today the wines are made by his son Valentin, who continues the philosophy that was founded by his parents: organic work in the vineyards, minimal intervention in the cellar, zero fining or filtration and an absolute minimal addition of sulphur when bottling.
Domaine Montanet-Thoden make high-quality Burgundian wines that are still affordable, which is becoming a bit of a rarity. The wines are generally characterized by their elegance, precision and minerality. Many of the cuvées are exclusively aged in steel tanks and some in old barriques.

"This is the domaine of La Cadette, a wonderful producer based near Vezelay, eking out small batch wines off organic farmed vineyards, made with considered but gentle hand in winery. La Cadette is the negociant label some may be familiar, these domaine wines less so at times, but made similarly and by the same family. This comes from 20 year old vines.
It’s floral and soft, slightly honey-buttery but in a charming way and backed up by a ripe line of lemony acidity. There’s ripe apple too, a softness overall, faint bitter almond characters and some faint Japanese pickled ginger notes too. It’s bright but yields well into its suppleness and roundness. Mellow, generous, balanced and pure. All fruit and savouriness. A delight."
