This is classic, bone-dry Chablis from the family firm of Billaud-Simon, one of the region's outstanding producers. Despite the sunny vintage, the wine offers a very pleasant acidity on the palate. It is currently revealing aromas of pear, quince, apricot and peach combined with fresh citrus notes.
Domaine Billaud-Simon has been a part of the Chablis wine region since 1815 and covers almost 17 hectares of vineyards in which Chardonnay reigns supreme. All of the parcels at Domaine Billaud-Simon are planted within a two kilometre radius, on the left and right banks of the Serein, in the heart of this historical appellation.

"The Chablis wine region stretches along the Serein valley and across 20 communes. Chablis, known as the ‘Porte d’Or de la Bourgogne’ (‘Golden gate of Burgundy’), has succeeded in establishing a reputation for its dry white wines with a distinctive style: clear, aromatic and lively with a distinct minerality.
Beautiful white gold hue with delicate pale green glimmers. A seductive and very classic Chablis nose offering vine peach, banana, citrus fruits and brioche. The palate is well-balanced, rich, fresh and elegant. The smooth, rich structure lingers on the end palate. Ripe fruits combine harmoniously with mineral notes to give a soft mouthfeel."

"The village-level Chablis from Billaud-Simon is a classic expression of the terroir, with aromas of lemon peel and white flowers and a fine, silky texture. The acidity is balanced if not pronounced, giving the wine finesse without a lot of tension. Régisseur Olivier Bailly notes that this final year of organic conversion was a struggle with the weather, but he is pleased with the final blend, which included 25% cask-fermented wine."
