"The Carrick EBM Chardonnay is so named for its ‘Extended Barrel Maturation,’ which imparts further character, structure and flavour to this wine. Aged in barrel for 18 months, it is a blend created from a selection of the winemaker’s best Chardonnay barrels.
The EBM Chardonnay 2021 is a blend of 3 different vineyard parcels, comprising 3 different clones, predominantly Mendoza with a small portion of Clone 6 and 548. Matured in barrique on gross lie for 18 months, before blending, stabilisation and bottling. Hand-picked, whole-bunch pressed and wild fermented.
The 2021 EBM has a nose that you just want to keep coming back to, with aromas of grapefruit marmalade, candied ginger, white blossum and toast. Great structure and intensity, it is almost velvety across the palate and seamless from start to finish. Similar notes follow through from the nose to the palate. Will continue to improve with cellaring."

"Fantastic bouquet with layers of complexity and intrigue, attention to detail and natural qualities with layers of mineral, spice and a light flinty seam. Peaches and quince, baked apples and pears, blossoms and barrel spices. Equally outstanding on the palate with with a satin-cream touch, power and intensity of fruits and mineral, flint and spice. As the wine opens out in glass the complexity and sense of site and style blossoms, the mouthfeel also showcases some very fine tannins and excellent acid line. Best drinking from 2025 through 2032+."

"Is it wrong to kick off a wine review with the word woof? Straight out the gate, it’s called EBM because that’s short for ‘Extended Barrel Maturation’ which, for this chardonnay anyway, injects a supremely rich, roasty, toasty element to its underlying baked peach, pineapple and grilled grapefruity goodness. Three different chardonnay clones (Mendoza, 6 and 548) sourced from three different vineyards, fermented wild then been blended by winemaker Rosie Menzies, her caretaker winemaker Zoe Kane and their team, it’s then aged for 18 months on its yeast lees before being stabilised and bottled."
