"Each year in the midst of pre-harvest madness we take a summer day off and we have a stone fruit session. We taste fruit from the orchards around the region and decide which fruit is the most flavourful and fitting for a beer sleeping in barrel back at the brewery. This time around, Truce has returned as a very pretty, fruitful, and balanced White Peach Saison. After spending 9 months in large format French oak barrels we pushed this herbaceous and lemony Saison on top of fruit for a healthy refermentation followed by three months of can conditioning to allow the flavours, body, and aroma come together fully. As with most of the things we make these days, patience is key. We’ve been rewarded with a deeply ‘Brood’ beverage: crisp white peach aromas, a note of herbaceous esters, zippy acidity, extremely balanced and smashable. As far as Truce goes, this really is some of our best work. We hope you enjoy her as much as we do!"
