As a Grand Marque house, Ayala isn't that well known here in NZ, but as it's show results indicate, this is a very classy Champagne!

"From the beautiful township and cellars in Ay, Champagne the bouquet delivers aromas of fresh oatmeal and white stone fruits, sweet citrus, fresh brioche, white blossoms and a core of mineral. Delicious, fresh, fine and complex on the palate. A bold and expressive mousse, crisp salivating acidity and fruit flavours that mirror the bouquet. A core of minerality remains through the palate adding length and complexity. Perfectly balanced and long. Best drinking from purchase and through 2028+."
4 ½ Stars Cuisine Champagne Tasting, October 2020 (NV)
"In the glass the persistent bead is evident with aromas of white flowers, fresh citrus and a rich, toasty savouriness that leads into an elegant, delicate fine palate. The palate is focussed with brioche and citrus characters and bright alive acid rounding off into a gentle explosive masterpiece."

"Tantalising aromas of freshly baked crusty lemon friands and beautifully refined rich, complex, spicy, zesty, toasty flavours with hints of Marmite and slivers of bubbly deliciousness."

"Perhaps one of Champagne's purest Bruts, the non-vintage Ayala Brut Mejeur highlights excellent ripe fruit, some nice aged elements and a superior crispness in the end. A perfect match with raw oysters on-the-half-shell. Medium to straw in colour; chalk and peach fuzz in the nose, most certainly an amalgamation of fruit and earth; dry, perky acidity, well balanced; fresh core fruit, with an a accent of mineral in the flavours; fresh and frisky in the aftertaste."
