As a Grand Marque house, Ayala isn't that well known here in NZ, but as it's show results indicate, this is a very classy Champagne!
18.5/20 Joelle Thomson, drinksbiz Magazine December 2023/January 2024 (NV)
"Champagne Ayala has forged a reputation for making dry champagnes with zesty citrus flavours and real depth of acidity that expresses the leading grape in the blend: Chardonnay, which makes up 45% of the wine. The balance is 35% Pinot Noir and 20% Pinot Meunier, both of which add savoury notes."
Rated Outstanding & 96/100 Cameron Douglas MS, November 2024 (NV)
"Complex, fresh, layered and classic, a fascinating bouquet with layers of sweet citrus and a deep centered autolysis, white strawberry and white fleshed stone fruits. A delicious wine on the palate with fine a mousse texture, a whisper of white spice and white stone fruits. The acid line is perfect carrying flavours and highlighting the complexities of autolysis. Delicious and lengthy with best drinking from day of purchase through 2032. Outstanding value!"
5 Stars & Top 10 Cuisine Champagne Tasting, November 2024 (NV)
"Expressive on the nose with toast, white chocolate, cream and nutty marzipan aromas. The palate is well weighted and has a vibrant mousse which fills the mouth with a soft creamy complexity complimented by the fine acid structure."
