15 Minute Bottles is a collaboration between two families, David Collins and Lana Kennett, and Tom Lascelles and Anne Kirsch. The project came about in Europe, when their paths crossed while Tom was working for Austrian, natural wine superstar, Claus Preisinger. With both couples coming back to New Zealand in 2021, they saw an opportunity to produce here the style of energetic, approachable natural wines they’d loved in Europe. With one family based in Canterbury, and the other in Central Otago, their intention is to produce multi-regional wines that are unfined, unfiltered with minimal added sulphites. David best explains the reason behind their name, 15 Minute Bottles –
"It’s rooted in the fun, energetic, thought provoking wine we fell for while in Europe. When we drank a banger, we would call it a '15 minute bottle' because it didn't hang around for long (enjoyed responsibly with a large group of friends of course)."

"Pinot Noir from the Luxston vineyard in Eyrewell Forest and Church Road in Waipara, both direct pressed, with a splash of skin fermented Sauvignon Blanc for verticality. Raised in a mixture of neutral oak barrels and stainless steel. Poised, bright and textural. Unfiltered and unfined. Minimal added sulphites."

"15 Minute Bottles, new to our readers, have crafted a spectacular new wave rosé with pinot noir from two vineyards: Luxton in Eyrewell Forest and Church Road in Waipara, given shape and structure through the addition of amber wine (skin fermented) sauvignon blanc and ageing part of the blend in neutral oak. A delicious drink which defies expectation and classification.
Luminous coral-pink with a light haze. This is intensely flavoured and distinctly new wave, straddling the space between an amber wine, a rosé and a cerasuolo-like light red. There are fresh and crunchy mid-weight flavours of cranberry, wild strawberry, bitter cherry and pink grapefruit with citrus pith phenolics sitting alongside some spicy dried herbs. There is a fine, bony structure providing shape for the grainy mouth-feel and some uplifting spritz on the tongue before everything settles into tangy, savoury, fruity and pithy pockets across the palate. Interesting, appetisingly dry and well-balanced, it will serve multiple purposes this summer and it will develop savoury, spicy complexity in the near-term if kept."

"2023 Rosé Pinot Noir is from the Luxton vineyard in Eyrewell Forest, Oxford. A pop of whole bunch/carbonic personality. A pale coral pink in the glass, with strawberry bubblegum, liquorice, cranberry and rhubarb. Very dry, with a drive of bright acidity, but look out for a swaddle of texture at the back of the palate. A long finish… very good."
