Silver Wing is committed to crafting natural wines with distinct textures sourced from an organic Waipara Vineyard. Employing meticulous handpicking methods, wild fermentation, extended skin contact, and eschewing additives, Silver Wing produces artisanal, preservative-free wines.
From day one, our vineyard has embraced organic practices, cultivating Pinot Noir, Sauvignon Blanc, Riesling, Semillon, and collaborating with two Chardonnay growers while exploring additional grape varieties.
Fermented and aged in ceramic eggs or French barrels, our wines benefit from the unique characteristics of these vessels, fostering movement, micro-oxygenation, and yeast colonization, resulting in a soulful, textured experience distinct from stainless steel or traditional barrel aging.
Winemaker Andrew Fox, trained at EIT, boasts a wealth of experience across renowned wine regions. Beginning his own winemaking journey in 2010, Silver Wing has evolved from a corner of a larger winery to its dedicated facility adjacent to the organic vineyard, embodying a commitment to quality and craftsmanship.
