As a Grand Marque house, Ayala isn't that well known here in NZ, but as it's show results indicate, this is a very classy Champagne!
Rated Outstanding & 95/100 Cameron Douglas MS, October 2026 (NV)
"A wonderfully seductive bouquet of fresh white fleshed fruit framed by a complex autolysis, a lovely freshness and nutty complexity. Flavours of miso and marmite, peach and fresh red apple, there’s a floral chalky quality with fresh grapefruit and saline mineral ideas. A full-bodied dry wine with a plush mousse and fine bubble qualities. Flavours and autolysis are on a constant rinse and repeat loop delivering a level of sophistication a complexity and long finish. A delicious example that gets better as the wine warms on the palate. BEst drinking from day of purchase through 2034+."
18.5/20 Joelle Thomson, drinksbiz Magazine December 2023/January 2024 (NV)
"Champagne Ayala has forged a reputation for making dry champagnes with zesty citrus flavours and real depth of acidity that expresses the leading grape in the blend: Chardonnay, which makes up 45% of the wine. The balance is 35% Pinot Noir and 20% Pinot Meunier, both of which add savoury notes."
5 Stars & Top 10 Cuisine Champagne Tasting, November 2024 (NV)
"Expressive on the nose with toast, white chocolate, cream and nutty marzipan aromas. The palate is well weighted and has a vibrant mousse which fills the mouth with a soft creamy complexity complimented by the fine acid structure."
