"This single vineyard Sauvignon Blanc is from our Saint Maur Vineyard in the Southern Valleys and is a true expression of the land. Aromas of almond, citrus, lemon thyme, green olive. On the palate, lemon, salt, cream, textural, finely structured, focused.
With minimal intervention winemaking, this Sauvignon Blanc was naturally fermented and aged for 12 – 18 months on yeast less in concrete egg tank and clay amphora. Unfined and unfiltered with low sulphur, the wine was then aged in bottle for a further 12 months before release."

"Full of personality, the 2020 vintage is a striking, single-vineyard wine. Harvested from 20 year-old vines, it was fermented with indigenous yeasts, lees-aged for 12 to 18 months in a concrete egg tank and clay amphora, and bottled unfined and unfiltered. Bright, light lemon/green, with a highly fragrant bouquet, it is mouthfilling, with concentrated, ripe, tropical fruit flavours, still very fresh and vigorous, good acid spine, impressive complexity and a long, dry finish. A tightly structured, thought-provoking wine, it should be at its best mid-2023+."
