This is wonderfully a food-friendly style, with red fruits in a bright and expressive palate packed with freshness, structure and some minerality. Chateau St Jacques follow Burgundy techniques, with fruit carefully de-stemmed for indigenous yeasts fermentation followed by 100% old oak aging in their historic cellar. This is a gorgeous red to decant soon or age a while, then match with duck or rich pork.
