"Our Aotea Méthode Traditionnelle is a very special wine. Two parcels of fruit were hand picked at ideal ripeness for this classical Méthode Traditionnelle Cuvée. The Pinot Noir is from our Brightwater Vineyard while the Chardonnay comes from our Cornfield Vineyard. The blend is 50/50 Pinot Noir and Chardonnay.

The grapes were hand harvested during the cool early hours of the day and brought to the winery quickly for processing. The free-run juice from the press was cold settled overnight before being racked, warmed and inoculated. A smooth ferment progressed to dryness, followed by malolactic fermentation. The young wine was then prepared for bottle fermentation and aged on lees for an extended period. In 2016 the wine was finished and released to celebrate our 40th vintage at Seifried’s.

Chris Seifried. The Aotea Méthode Traditionnelle has a gorgeous fine mousse which persists in the glass. The nose has grapefruit, warm brioche and buttered toast notes and the palate is luxurious and generous with full biscuity shortbread notes and a crisp, lasting finish."

"The non-vintage bubbly released in late 2016 was made from Chardonnay and Pinot Noir, harvested by hand in 2011 and disgorged after four years' maturation on its yeast lees. Scented and lively, it is citrusy and yeasty, with moderate acidity and a fully dry (1 gram/litre residual sugar) but not austere, lingering finish. (From Seifried)."

"Bright straw-yellow colour with a suggestion of gold, pale on the rim with a vigorous bead of moderately fine bubbles. The nose is elegantly concentrated with good depth and intensity of white and yellow stonefruits, and white floral elements entwined with complexing brioche and yeasty autolysis. The nose is well-proportioned and balanced, unfolding notes of toast and yeast extract. Dry to taste and medium-bodied, the palate is tightly bound with a core of white stonefruits and florals, along with mineral notes interwoven with bready-yeasty autolysis. The mouthfeel has very fine phenolic textures and a creamy mousse and effervescence, balanced by refreshing, racy acidity. The wine has linearity and carries the white stonefruit and bready flavours to a long, firm finish. This is a taut method traditionnelle with white stonefruit, floral and bready flavours and a fine-textured, refreshing palate. Serve as an aperitif and with seafood over the next 3+ years. An equal blend of Pinot Noir and Chardonnay from the estate ‘Cornfield’ and ‘Brightwater’ vineyards, the fruit hand-picked, all 2011 vintage, and fermented to 12.5% alc. and 1 g/L RS, with full MLF, the wine aged 4 years on lees, being disgorged in September 2016.
