A beautiful skin-fermented Sauvignon from Marlborough. Fermented on skins (and some stems) for 60 days, this wine was then pressed off for 8 months in old barrels. The result is a wine of cloudy complexion and subtle complexity, with harmonious characters of citrus, herbs and spice that provide remarkable interest and a sophisticated complement to food. A superbly elegant example of this on-skins style, the Mystical Being a must try for lovers of lo-fi and orange wine.

"This is Sauvignon Blanc, with 60 days skin contact, then aged in used barrels for 9 months. Two picking bins were used for fermentation, one half whole bunch and half destemmed, the other all destemmed. This is the first vintage. This is really balanced, delicate and restrained for a skin contact wine with lovely grapefruit, citrus and pear fruit with some really attractive tropical fruit aromas, as well as a good lick of fennel. Good acidity and a little bit of structure in the mouth with great purity of fruit and lovely skin-ferment complexity. Shows great precision."
