"This New Zealand whisky brand was established by husband and wife team Rachael and Mathew Thomson in 2010. With a new distillery now in operation in Riverhead, north west of central Auckland, they blend whiskies and distil single malt using a hand-beaten copper pot still and New Zealand grown and malted barley. The Thomsons age their whiskies in a range of casks including ex-bourbon barrels, New Zealand red wine casks and some miniatures.
The New Zealand-grown malted barley used in this whisky is smoked using South Island peat for an additional local touch. The whisky is distilled through a copper pot still and bottled in its youth, as “an update from the barrel”. The aroma is of smoke, salt and a vanilla sweetness. On the palate it is rounded with a subtle sweetness and intense smoke that lingers on the finish."
