"Salty White’ is my ode to the coastline, an attempt to marry both the saline and floral elements of our land. 40% Muller-Thurgau and 60% Sauvignon Blanc co-fermented whole bunch in amphora with a little touch of skin contact for a moreish salty finish. This wine I consider one of my most explorative and where I let my imagination fly in order to tease out a unique ‘New Zealand-ness’. In order to maintain purity and maximum expression, this wine is raised in amphorae and has no added sulphites."

"Theo Coles has a whole big thing about finding saltiness in wines and getting that character involved. It’s sauvignon blanc and muller thurgau seeing 14 days on skins. Raised in amphora. No SO2. No salt added either.
Indeed, this is a salty white wine! Scents of green herb, light floral notes, jasmine, lets say, some lemon curd and tropical fruit in that whiff too. Juicy in the palate with tingly, saline acidity very prominent, gentle savoury nuttiness and a barely there wheaty character. Good volume of flavour. Has some flair. Fun to drink with good complexity."
