90% Sauvignon Blanc & 10% Sémillon
A delicious blend of Sauvignon and Semillon that was made with no added preservatives. Silver Wing were early in taking up natural and preservative-free styles, and this wine offers a delicately complex balance of fresh and aromatic Sauvignon with the weighty, slightly waxy presence of Semillon.

"Crafted from a blend of 90% sauvignon blanc and 10% semillon from winemaker Andrew Fox’s Stephenson’s Block that’d been soaked overnight on its skins, this wine was fermented in a 675 litre ceramic egg and matured for 4 months on its yeast lees without batonnage (stirring of the lees) and was bottled in the last week of July 2018. It’s golden in the glass and has aromas of lemongrass, fennel, hay bales, and tomato stalk. All are replicated on the palate, which is strong and stemmy, complex and citrussy. It’s slightly cloudy and the acidity is intense. If you’re looking for the opposite of ‘comfortable’ in a white blend then this is your ticket."
