"Warm and settled weather during flowering led to a very large initial set. Fruit thinning was then undertaken to bring the crop back to the desired level. A perfect summer, followed by a warm dry autumn enabled the subsequent grapes to be harvested with excellent flavour development and physiological ripeness.
This is a unique expression of a traditional white Bordeaux blend using approximately 70% Sauvignon Blanc & 30% Semillon. The Sauvignon was picked in stages during April, timing each harvest to optimise the grapes’ range of natural flavours. The Semillon was harvested in May. These varieties were fermented separately, the majority of the Sauvignon in stainless steel to retain the pure fruit character, and all of the Semillon in oak to add texture. A small percentage of the Sauvignon Blanc was also matured in new French barrels to give extra length and complexity. Both varieties were aged on their natural deposits of yeast lees (sue lie) for approximately 10 months, prior to blending. Once bottled, the wine was left to age for another year before release, allowing it to integrate further.
The colour is pale lemon with aromas of orange blossom, lime, gooseberry and passionfruit. There is also a hint of struck match complexity arising from skin contact during fermentation. The Semillon component helps fill out the palate, adding fruit weight, richness and age-ability, while also acting to restrain the exuberance of the sauvignon blanc. The lees contact adds further creaminess and body, however there is still a crisp refreshing minerality on the finish."

"At its best, this Waipara, North Canterbury wine is concentrated and complex, with loads of personality. From vines 30 years old, the 2016 vintage was 35 per cent oak-aged. Bright, light lemon/green, with a complex bouquet, it is still very fresh and youthful. Poised and tightly structured, it is ripely herbaceous, with a subtle seasoning of toasty oak adding richness and a very long, dry (1.6 grams/litre of residual sugar) finish. Revealing obvious potential, it's well worth cellaring to 2020+."

"What a great bouquet of Sav/Sem. Aromas of sweet grapefruit and lemon peel, waxy white fleshed peaches then flowers and limestone minerals, some leesy tension and overall richness and engagement. Warm, creamy, dry, plenty of acidity and rich in flavours of citrus fruits – pith and peel, white stone fruits and stony minerality. A lovely wine, fairly lengthy finish. Drink now and through 2023."

"Bright straw-yellow colour with lemon hues, a little lighter on the edge. The nose is firmly concentrated and beautifully proportioned with elegant, but intensely concentrated aromas of green stonefruits, nectarines and greengages along with gooseberry notes, exotic lantana and florals, and a subtle layer of nutty lees and oak. Dry to taste and medium-full bodied, the palate is vibrant with a finely concentrated core of integrated flavours of green stonefruits, gooseberries, fresh herbs and subtle notes of lees and oak. providing complexing detail. The fruit has richness and lusciousness and flows along a fine-textured line, providing phenolic guidance, with fresh, gentle acidity lending vitality. The wine carries to a soft, mouthwatering finish. This is an elegant, vibrant, finely concentrated oak-influenced Sauvignon/Semillon blend with stonefruit, gooseberry and herb flavours with complexing nutty detail on a fine-textured palate. Match with herb-marinated seafood, poultry, pork and veal over the next 4 years. A blend of approx. 70% Sauvignon Blanc and 30% Semillon, the Sauvignon Blanc predominantly fermented in stainless-steel with a small portion in new French oak, the Semillon in barrel, to 14.0% alc. and dryness, the wine aged 10 months on lees."
