Thousand Fires is a blast to past, and naturally they’ve thrown a spin on this classic Aussie dry white blend which one rarely sees today – think Hunter Burgundy, Swann Valley dry white, Barossa Chablis.
Sémillon farmed by David Gartelman in the McLaren Vale, whole bunch fermented. Chenin Blanc farmed by Fiona Wood, also in the McLaren Vale, on skins in barrel.
The wine? A honeyed hue, super slurpy with a chenin acid ping to finish. Lightly tropical.

"A 1000 Fires is a combination of two grapes grown in the McLaren Vale Valley of South Australia by two different farmers. The wine is part whole-bunch fermented Sémillon farmed by David Gartelman, which means he throws the whole kit and kaboodle into the tank: stems, seeds and all. The whole-bunch method was forgotten until recent farmers noticed the complexity of its wines. It softens out sharp acidic vintages and adds brightness to ripe vintages.
It also has Chenin Blanc farmed by Fiona Wood, fermented with its skins in the barrel. Leaving the skins on white grapes gives them more time to pick up traits of red wines. Body, tannins and stricter structure.
Both farmers took special care to use minimal intervention and no harmful chemicals like pesticides or herbicides, and no crazy filters like egg whites. Some people do that!
The result of all this hard work is a freaking stellar wine. It smells like clementine jam on a poppy seed muffin. It tastes like pickled lemon juice and cucumber water. It tastes like the wine we’ll drink in 2025 without thinking twice about. It’s like kombucha from space. It’s what I imagine aliens mix in their Arnold Palmers."
