This small production, limited-edition Tio Pepe is unclarified and unfiltered, resulting in a super fresh Fino. En Rama is alive with flavour and is the closest you can get to drinking directly out of the cask. It has more nutty and yeasty aromas than the usual Tio Pepe and on the palate it is fresh and citrusy, with a complex, saline finish. A truly gastronomic wine it pairs perfectly with olives, almonds, oily fish and tapas.

"Salt and a bit of flor/mould flavour too – this is so similar to cheese in flavour profile! Exquisite fruit, which is beautifully crunchy and fresh, juxtaposing the funkiness. Lengthy, floral, perfumed. Compared with the older bottlings this is obviously more youthful in style, and has plenty of fuel in the tank for ageing."

"This 2018 is the ninth release of the En Rama from the Tio Pepe solera, and it’s a real cracker. It’s incredibly fresh, aromatic, pretty and detailed with tangy lemony fruit, some rich spiciness, a bit of bite and a lovely salty edge. This has an almost electric feel in the mouth, with brightness and focus. It’s vivid, refreshing and utterly compelling. Perhaps the best yet?"

"Bright, light golden yellow colour, lighter edged. The bouquet is very finely concentrated, tightly bound with pure pungent flor yeast aromas. This has finesse and purity, with florals and almonds. Very to taste and elegant in body, the palate has very fresh, penetratingly intense flavours of pungent flor yeast, fine nutty elements with florals and saline. The textures are very refined, with thirst-quenching acidity, and the palate has great linearity. This is pure and mouth-wateringly fresh. 100% Palomino, undergoing a minimum of 4 years biological aging, 15.0% alc. and <2.0 g/L RS. A 60/20,000 cask selection. (375 ml)"
