The Gentle Folk winemaking style continues to evolve, every year Gareth learns a little more, every year the vines get a little older. This is a bit of an experimental wine from Gareth and Rainbo. This is Sauvignon Blanc grapes fermented as whole berries under Chardonnay juice for two weeks before pressing.
It doesn't quite fit in the 'amber' wine category, it's still a slippery, smashable white wine, but if you go looking there's certainly another level of texture and detail here than your average Adelaide Hills Sauvignon Blanc. The perfect white to while away an afternoon with.
Lots of juicy Sauvignon Blanc flavours. Some passionfruit, lemongrass, a hint of grapefruit and a fresh breezy feel. But there's a faint chalky grip here too. A savouriness through the finish which tugs you back to the glass. Very easy to knock back.

"A Sauvignon Blanc/Chardonnay co-ferment from the schist of the back block. Couple of buckets of Gewurztraminer skins thrown into the mix. Two weeks of whole bunches covered in juice slowly going through carbonic maceration. Not orange, just texture and aromatics for days. Goodness, this is the Hills."
