"Well, it's been a few months since we brewed a really mean West Coast IPA. Back to basics then plus some. Using the biggest most aggressive hops we have in our arsenal; The newly released hop Pahto, (previously known as Hop Breeding Company – HBC682 ). Pahto is the Native American name for Mt Adams, which is a major feature on the skyline in the Yakima Valley and is also part of the Cascade mountain range, which also gave its name to the hop variety.
At 20% alpha acid, this is delivering us some explosive bitterness. As a complement to this hop weapon, we also have added Columbus hops, which was the previous monster of a hop before Pahto arrived on the scene last year. Columbus has been a favourite at Epic with it featuring in many of our beers including Armageddon IPA. Loved for its big pungent resiny character. To make sure we are delivering as much bang for buck as we can, there is also battalions worth of Magnum hops. Magnum are known classically as a bittering hop but it also gives a depth of resinous hop complexity when used as a dry hop. Finally to balance things out a bit we have bolted on some Simcoe to bring in a little citrus fruit note, and a bunch more resin.
WOW, take cover, this is going to be big. As for the rest of the beer we have a deliciously balanced and clean malt base made with the highly desirable Maris Otter Pale Ale Malt from the UK."
