"2015 Hieronymus is composed of 41% of Cabernet Sauvignon, 22% Merlot, 17% Cabernet Franc, 12% Malbec and 8% Tempranillo from our Gimblett (58%) and Bridge Pa Triangle (42%) vineyards and represents the pinnacle of our Hawke's Bay red blends. There were three different hand picks from 1st to 15th April. Batches were fermented separately in oak top cuves and then drained to barrel without pressing. The elevage for this wine was 26 months in 50% new French oak from a select number coopers. This wine was not fined prior to bottling on 15th February 2018."

"Youthful, powerful and focused bouquet of Hawkes Bay red wine. The Cabernet is the driving force on the nose with cigar and blackberry fruit, the Franc is unmistakable with olive and sweet leaves, violet and dark berry; the Malbec highlights new oak with a bitter chocolate and black cherry note; the Merlot brings everything together with flavours of plum and softness. Other flavours include marmite and barrel spices. A youthful example with big tannins and acidity to match and plenty new oak, complex and lengthy finish. Cellar till at least 2025 before sampling again. This will be a twenty five year wine. Cellar properly and this wine will reward."

"This is profound and compelling; the superbly expressed bouquet shows creme de cassis, Black Doris plum, vanilla, spicy oak and cocoa characters with hints of dried herb and mixed spice. The palate delivers outstanding concentration and depth, wonderfully complemented by layers of rich texture and polished tannins, finishing impressively long and engaging. A blend of 41% cabernet sauvignon, 22% merlot, 17% cabernet franc, 12% malbec and 8% tempranillo. At its best: 2024 to 2035."

"280 cases made. A blend of cabernet sauvignon, merlot, cabernet franc, malbec and tempranillo. Big, dense red with concentration and power. Layers of berry, dried fruits, spice, cedar and a suggestion of floral characters. A very complex wine with a higher level of dry extract (a measure of flavour concentration) than any wine previously made at Elephant Hill. Drink now – 2030."

"The powerful, sturdy, rich 2015 vintage is a blend of Cabernet Sauvignon (41 per cent), Merlot (22 per cent), Cabernet Franc (17 per cent), Malbec (12 per cent) and Tempranillo (8 per cent), estate-grown in the Gimblett Gravels (58 per cent) and the Bridge Pa Triangle (42 per cent). Matured for 26 months in French oak casks (50 per cent new), it is a boldly coloured, fruit-packed red, with a fragrant, spicy bouquet. Still youthful, it is full-bodied, with dense, well-ripened blackcurrant, plum, spice and nut flavours, hints of pepper and licorice, good tannin backbone, and a long, very harmonious finish. Best drinking 2022+."

"Full, saturated black-hued purple-red colour with inky depth, very youthful in appearance. The nose is refined in expression with densely packed and concentrated aromas of ripe black berried fruits and black plums along with nuances of liquorice and suggestions of boysenberries, harmoniously layered with Asian spices and sweet, nutty oak. The aromatics possess freshness, unfolding nuances of dark herbs and florals. The aromatics grow in breadth and depth, becoming fulsome in the glass. Full-bodied, the palate is explosively rich with sweet and succulent flavours of ripe blackberries and black plums, along with nuances of boysenberries, liquorice, spices and oak. The fruit sweetness is the feature, forming a deep, plush and opulent heart, opening to fill the mouth. The fruit is framed by serious, fine-grained, flowery tannin structure, and the wine carries with great power and drive to a luscious, long and sustained finish. This is a superbly rich and opulent Merlot/Malbec-based wine with succulently sweet blackberry, plum, liquorice and spice flavours on a seriously structured, but refined palate. Match with roasted and slow-cooked lamb, venison and game meat dishes over the next 15-20 years. A co-fermented blend of 46% Merlot and 44% Malbec with 10% Cabernet Sauvignon, fruit 90% from the Triangle vineyard and 10% Gimblett, fermented to 14.0% alc., the wine aged 26 months in 67% new French oak. 80 dozen made."
